The fans only operate at low speeds, and you're not having low speed problems. So my guess is either the rad is clogged (potentially between) or there is something blocking air flow thru the front of the car. Are the air dams all in place?

Yes i checked all that, i was going to change the thermostat next.
^I read one of your post about the air issue. I was wondering why mine didn't do that. I do think I heard a burping sound when I took a hard right turn though.
Did you burp yours out of the throttle body steam tube?
Mine didn't come with a rear steam tube. I might have air in the system without knowing it because I had my temps lowered when I got my tune. Now that I think of it the air may have purged out when I replaced the coolant sending unit. My first one failed after a few weeks and it is located high enough on the head. Mine runs under 200 in Florida with A4 trans and no other trans cooler.
Some how I'm hard pressed to think the issue is clogged radiator fins if the temp drops at cruise speed when the fans are likely running but rises at highway speeds where air flow through the radiator should provide much better cooling than the fans do at low vehicle speeds.
And it seems to me that if the T'stat was stuck closed the heating problem would constantly exist and not just at higher vehicle speeds. The fact that the temps come down when returning to lower vehicle speeds suggests that there is coolant flow occurring.
I suspect that there is air in the cooling system. I had very similar issues when there was trapped air in my cooling system. JMHO
Interesting. I have never had an air in the coolant issue with my car. However, every time I have touched the coolant my car has had the front up on blocks so the car is at an angle. Wondering if you guys would have as many issue getting the air out if you were up on ramps.
I don't use ramps but I have to lower the back end first when taking it down from jack-stands. If you lower the front first there isn't enough clearance.
Good point vettenuts. Maybe all you need is to jack the front of the car up to burp.
