Did you give any thought to the 4-pot Brembo ATS caliper? Rotor sizes are nearly the same. Offsets nearly the same. I'm just not sure how close the mounts are. I measured when I had an ATS...and it seemed like it's damned close to bolt-on.
Calipers can be had for less than $100. Could be worth a shot.

as far as I know, the ATS and CTSV caliper bolt pattern is the same.
I had considered briefly the 4 piston CTSV/Camaro caliper set up,
but I figure since a bracket is going to be necessary either way (unless I can fandangle a budget ZR1 setup), I might as well try and get a little more bang for my buck.
Since I've got the knuckle on order, I think trying a few combinations will be the best bet.
ie c7 z51
CTS
ATS
maybe GT350R
etc. I think maybe 2 different bracket styles would cover a lot of ground
Another concern I remembered today is the emergency brake. That is not something I'm willing to sacrifice at this point.

You can buy one from AC Delco for $120 from Amazon.
But I've seen pairs on eBay for $100 in the past from scrap yards. Haven't looked in a while, though.

Spindle/hub came in today.
I need to get my stock seats listed up so I can spend a little money on this project.
Last night I'm looking around for OEM brembo calipers.
I stumble across the ATS-V caliper on the Centric website.
The calipers cross fit two other vehicles.
CTS-V2 - no surprise there, but pretty interesting since the ATS caliper is a little cheaper.
C7 Z06 - The new z06 uses the same caliper as the CTSV and ATSV!
This is exciting for 2 reasons:
1. the ATS caliper is cheaper
2. The C7 rotor has a way better chance of bolting on to the C5.
