I’m wanting to delete the AIR system and I know doing so will set off a cel and will need to be tuned out but my question is it okay to run the car like this until I have it tuned or will it cause performance issues?
Smoken1 is correct - but just to elaborate more for your piece of mind....
The AIR pump is just for help passing emissions and does just what it sounds like - pumps air into the exhaust.

It has no affect what-so-ever on performance or normal operation. FYI I have removed mine (but also tuned it out of the ECU)
