So I exchanged the instrument cluster in my ‘04 with the one I had previously in my ‘00 so that I could again have my white-faced instruments. But now it shows the miles from my ‘00 Instead of the correct ‘04 miles. What piece of the cluster do I need to change to get my correct miles back?
you would need to change the boards in the cluster. remove the ballast on the back and seperate the plastic on the back side. do you have heads up display in both clusters?

I cannibalized from a cluster I had previously used in my 2000 about 10 years ago. Just needed to exchange the circuit board and outer bezel to keep Heads-Up and maintain correct mileage.

what software do you know of to change an odometer
I don't know anything about software to change the odometer. In my case I just wanted to keep the original odometer reading in my car when I put in a different instrument cluster, so I switched the circuit boards.
I suspect that the software may be common knowledge to those technicians that perform this task routinely. I had been working with an ASE certified technician in our area for a number of years and we've discussed various electrical issues with the C5 that have plagued us. He is our go to guy in my area for any electrical issues with modern cars and has solved a number of issues with C5's since I've know him. He diagnosed and then engineered an electrical solution to the electrical column locking problem on the C5 back in 2000 before anyone else had a permanent solution and GM would do nothing but change components. One of the problems we discussed was having to remove the cluster and or some of it's components to update the mileage. About a year ago, he mentioned that he had gotten some new software that he believed would allow him to correct the mileage in a C5 cluster.
Since he had a customer that needed to replace his original cluster, he offered to let me watch as he tried to update the mileage after installing a replacement cluster. Previously he would need to start with a new (blank mileage) cluster to do this using the GM software. This meant typically a customer would need to purchase a new cluster instead of a used one. Since the vehicle had it's original cluster he was able to verify it's mileage and vehicle ownership to start with. After replacing the cluster in the car with the new {used) one (but before reinstalling the remaining dash components), he plugged in his laptop and turned on the cars ignition. Within a few minutes he had reprogrammed the cluster to the previous (original) cluster's mileage via the OBDII port.
If you check with your local "instrumentation" expert, you may find he also now has this software. It certainly has the potential to save a lot of time and expense.
Clearly in the wrong hands it could be abused. However, since many states are reporting (selling ?) annual inspection data to places such as CARFAX, any attempt to use it to roll back mileage is very likely to show up as a 'mileage error' on a CARFAX report.
