Well the LS1 is down half a liter. No replacement for displacement. You can get away with a milder cam in bigger displacement motors. That's some of the "smoothness" right there. LS1 was the start, the LS3 was the culmination of 10+ years of engine refinement without wildly changing the formula. The LT1 cheats with direct injection and all the other modern features that you'd expect in a motor developed almost 20 years after the LS1. Look up the overlay of an LT1 and an LS1 dyno, you'll quickly see the "giddy up" you're talking about. It's a tidal wave of torque nice and early in the powerband. I've never driven an LS3 car, but have a good 200 miles in an LT1 C7, makes my LS6 feel like my old Honda K20. Needs to rev to make some power. It's all perspective, on paper a C5Z and an LT1 C7 aren't far off each other, but in the real world they have significantly different engine characteristics.
Corvettes are great in this aspect, they only get better. I don't think any modern Corvette has taken a step back from the previous generation. Not true for other cars.

Yup, the LS platform just keeps getting better....
Remember, the LS1 does NOT have VVT, less displacement, worse heads, etc
Even a newer 5.3 truck motor makes more power and is smoother and more efficient than our LS1/LS6 C5 Vettes
But that's where hot rodding roots come from ! Have fun and do some tweaks
Also remember the LS1 has a 16 Hz chip, the LS3 has a 32 Hz chip and the LT1 has a 128 Hz chip to run it. The 97-03 chips were only 512K while the LT1 is well over 2000K in its programming.
