I have a 2001 Z06 with a leaking slave and master cylinder. I figured if we are going that far I might as well get a full clutch and hydraulics kit put in. A very reputable corvette shop in my area quoted me $2500 for the whole job, and said they will replace it with the LS7 clutch. This price seems a little high to me and I’m wondering if anyone else has had some experience with quotes for this kind of job.
I do all my own work so I don't reeaally know the going rates for stuff but that's probably what "the book" says it pays. 2500 for parts and labor really doesn't sound at all unreasonable to me. If around 1k of that is parts that's 1500 labor so around 15 hours. A couple buddies and I can do a clutch on my car in a day no problem but that's 3 men*8 hours is 24 man hours at 100 bucks an hour means we would charge you a lot more if we were a shop!
ALLDATA has the job at 9.3 labor hours total. They are raking you over the coals on labor or parts (likely both). The parts are somewhere in the neighborhood of $600 retail if you were to buy them yourself. So the rough math would suggest they are about $1k too high.

Parts pricing depends to a large degree on which parts. A true Z06 clutch would be around $600 for just the clutch. The LUK 04-905 kit is much less than a GM LS7. So it's important to know which parts are included. You want a GM Z06 slave cylinder and a remote bleeder, of course.
My shop allowed me to bring my own parts, but does not warrant the parts, so if the clutch dies in a year, I'm out the labor for the next one.
It's a lot of work, corvette masters in Maitland, FL quotes the job at 10.5 hours, for just the clutch.
1785 with a stage 3 clutch done and out the door that’s price for a LS7 clutch I would I would say is outrageous
If you did the work your self you can knock it out in under 3-4 hours alone with no help ....and get a real nice all new clutch for for few hundred bucks if you got the tools handy ..

Tell us your procedure how it can be done with in 4hrs??? I'm sure many off us want to know.
Easy I had mine out and done in that time ....and after I wrecked that cheap OEM Ls7 Gold series the next man had it it done much quicker then 3 hrs start to finish ....
1st off jack up the car on 4 jack stands ...
2 Remove Brake rotor amd calipers 2 bolts each side ..and ebrake pins
3 un bolt the a -arms this saves time from messing with any stubborn ball joints ...
4 take out the torque tube cover bolts all 36-40 of them takes about 2 mins with a impact
5 take out the bell housing bolts
6 disconnect the one clutch line to your master
7 unhook all electrical/ two rear brake lines
8 take out the 4 rear cradle bolts
9 lower it
10 ur cannon is out
11 swap clutch and bolts re assemble and bleed the two rear brakes ...I have a homemade bleeder syphon pump for my clutch although it’s best to bleed it manually....This job take 3-4 hours alone ....
Used a 1/2 drive impact wrench extreme off brand they work nice with 3 settings

I paid a shop that specializes in Corvettes $1100 in labor to replace mine. I supplied them with the clutch, flywheel, slave and remote bleeder (I bought everything thinking I was going to do the work originally) which was ~ another $700 IIRC. I replaced the master myself which is an easy job that can be done in your driveway.
