I'm thinking of swapping my C5 Z06's LS6 with a LS7 from a C6 Z. What are the major stumbling blocks that I will find?

Make sure the LS7 heads have been reworked before you think about making the swap.

Why, aren't stock heads good enough?

Man you gotta do at least a little reading. There are hundreds of threads on this thru the years. Long and short of it, on LS7 factory heads the valve guide and the valve hole itself are not exactly concentric. This causes the valve to rock slightly when it opens and closes fatiguing the stem and snapping the valve which then falls into the cylinder grenading the engine.
The titanium connecting rods also wear on each other and send titanium flakes thru the engine. You better be sure LS7 is what you want or get one rebuilt with good heads and good rods.

OK, I can see by quickly looking around that there is a lot reading to do. I just didn't know where to look first, you just pointed out a very serious problem that I thought was worst than the problem with my C5Z heads, which I only had to replaced the springs and retainers right away. Seems like the LS7 has even a worst track record. Hmmm, seems like the question is wether to get a rebuilt unit or do one myself. I've done a lot of builds in the past but never on the LS platform. This has the potential to be a very expensive project.
Thank you for your input

I drove my friend's new to him C6 GS this weekend. Knowing how that car goes, I'd say an LS3 C5 would have to be a rocket with a bit of easy work before the engine goes in.....
