Without a proper tune, it will run a little lean and you will not get all the new HP/TQ that the new headers can provide. I just would drive it normal and not beat on it until it tuned. I installed a set of headers on the wife's 06 C6 NM6 Coupe. It ran fine but you could tell, that it needed tuning. After tuning, It woke up and man it ran great!.
IMHO, Once you get the headers installed and just before you get it tuned, I would install two new primary O2 sensors, new plugs and wires and make sure that the intake trace TB, MAF & Air Filter are clean.

Be sure to tie the O2s wires away from the headers. We've used P clamps to hold the wires and the bolts attaching the tunnel heat shield to the car to keep wires away from heat.
