Keep the sensors as they are a very important early warning system for a leak that could help you get off of the road safely. If you do ruin a sensor with a can of fix a flat. (I've heard stories both ways on this) you can always buy another sensor. You could even buy a sensor ahead of time. It is part # 10438853 for year 2000 and older Corvettes. The other thing a lot of us have done is get a small jack from C5Frederik also carry a compressor and patch kit.
If you take the sensors out of the system you'll always get the "Check Tire Pressure Monitor System" message on the DIC. You just have to push reset to clear it.
I'd agree with leaving them in. If you are going to have a catastrophic blowout you aren't going to fix it with fix-a-flat. Most flats are slow nail type punctures. With the sensors you'll have an indication of a leak and be able to get attention before it's not drivable. Without the warning you may ruin the tire due to running high speeds on a low tire.
