A friend competes in various road races (Gamblers Run, Silver State, etc.) and says that Water Wetter and water is sufficient enough to cool his 2002 Z06 running an average of 130mph for the duration of the event. On my next coolant change, i'll eliminate Dexcool from my car.

True: glycol does not have the specific heat capacity of water. So a water + water-wetter can take more heat than (water+clycol) + water wetter.
Water Wetter with water will aid in heat transfer, but, the engine running temperature is controlled by the thermostat. Unless you change that the engine will run at the same temp. I have a 178 therm and fan controller. The Wetter made no diff in running temp.
