so far I've got blackwing/airduct/coupler, full exhaust, nx kit, 231/237 cam. what heads should I get? new/used, chamber, stage, runners, it's all greek to me.
That question is hard to answer without knowing what plans you have for future mods. People would advise different heads depending on whether you are planning on N.A future modifications or if you were planning on a Blower or Turbo in the future they might recommend somthing else. Also, do you need to pass smog? That might make a diffference in the heads & how far to take them too. Once you have answered these questions I think more people will chime in. Also, contact a few Forum Vendors to discuss what your plans are they can steer you in the right direction. If I was starting over again today, I would do gears before head and cam because it would address the lag that most nearly stock Vette's have off the line.
Having said all that I am no expert just a few observations from reading and talking to several vendors.
I would suggest AFR 205's with 66cc chambers if you are going to run nx. They are beefier than the stock heads and even more so than ported heads. That is a good cam for nitrous but pretty big for a stock bottom end. I'd be careful. With that cam, a set of AFR's and a 100 shot you will be well over 500rwhp. That's could break stock stuff. Just my $.02

I have LPE LS-6 heads and would do it all over again if I had to. This is the only engine that I've ever installed ported headson , and they make a hugh difference. As far as combustion chamber size, I stayed stock to give me more options down the road in case I want to go the S/C route.
I have MTI's Stage 2E heads. These are LS1 cores that have been ported and polished. Combined with the MTI C2 cam 224-581-112LSA and Kooks Lt's with x-pipe and high flow cats = 417rwph and 395ft/lbs trq. Give David at MTI a call to discuss your needs.
