For a 2004 C5 - I just purchased a set of wheels & tires for use in driver's ed events. I don't have sensors for the new wheels & tires. Will I get an error message if I don't use sensors? If so, how to you remove the error message? Any other suggestions? Thanks.

Yes, you will get a message on the DIC - hit reset, it will go away until the next time you go for a drive. If you have a Tech II you can delete the entire feature (like on a Z06), not sure if you can do it with LS1 Edit and similar programs. I just ignore the message when I run my wheels without the sensors.
Just hit "reset" every time you start the engine. Then turn off the traction control. You are ready to roll!
You are better off without the sensors in your track tires anyways, as the pressure can get over 40# and trigger a code while you're driving. Just check you tires and lugnuts after each run to be sure all is well.
