But to be polite and answer your questions:
1) Yes, some of us have paddle shift.

I have it. It's not a substitute for a manual. It is an improvement over the A4 in terms of gear ratios. It also gives you the option of shifting the car for yourself which can be both practical and more fun. It's a great option if you drive the car regularly, especially in traffic, or just don't want to or can't do the manual shifting.
