Anybody know of a alignment shop that truly knows what the heck they are doing with Corvettes in the Daytona FL area?

You might check into your dealership for an alignment. When I needed a more radical alignment, my Corvette racing buddy (who I trust) somewhat surprisingly suggested the dealership. My local dealership has the latest high-tech alignment equipment and knowledgeable technicians...they're familiar with the Corvette. The dealership did an excellent job on my car with printouts showing the before and after specs.

Agree with WayneO. My dealership just took delivery of a beautiful new Hunter alignment machine. Mine wasn't the first car they aligned with it, but it was in the first group. If your dealership has invested in the tire changing equipment needed to service GY runflats, there's a good chance they'll also have a decent alignment rig.
