And I took mine to one of the larger dealers in Illinois who sponsors a Corvette club and they still cracked the rockers by not paying any attention to how they lifted it. Even a shop with a good reputation can have an employee who doesn't give a rat's on the day when he works on your car.

The steering wheel isn't going to move during an alignment. The only adjustment that would put any sideways force on the tires would be toe and if it was far enough off to make any difference in the wheel position then you would have just gone through a set of tires in a few thousand miles. We're talking moving the tire 1/10 of an inch from straight.
You just have to straighten the wheel when you park it. Then do an alignment. Where ever the wheel is pointed when you start the alignment is where it will point when driving down the road after you finish.

Tell your dealer you'll take care of it when the dealership corrects the wheel / alignment and DEMAND don't ask for the printout if they can't do it walk away and find someone who will do the work YOU asked for not what they WANT to do. the steering wheel being off center has nothing to do with the vehicle being aligned (except annoying for you of course) however part of an alignment is to center the steering wheel. its just part of the alignment process. Your wheel can be 45 degrees off and the alignment perfect (except the steering wheel off center of course) usually when the wheel is off center thats the first indicator your toe is out of wack on one side or both. if you want to impress them which ever way its off centered they need to shorten the oppisite side tie rod and lengthen that sides tie rod. if its off to the right then they should shorten the left side and lengthen the right side tie rod length
Don't forget that centering the steering wheel also centers the steering rack so it has equal travel in both directions. It is possible (very extreme, I agree) to set the toe, and have the rack way off its center of travel.

I dont know if someone else responded about this? BUT the steering position sensor is part of the TC and the wheel should be straight when the car is tracking straight PERIOD

Bank wont let me do it over the phone so Tuesday I will go to the bank, Wednesday I will go to the dealer.
