The shorter left and right ones direct air into ducts just behind them which cool the front brakes. As has been said, the center one directs air to the radiator and the radiator also gets cooling air through the front grille - think that I read that its about a 60/40 ratio. 60 percent through the grille and 40 from the center spoiler. The side ones are easy to replace; just three 7mm screws attach each one to the car and a plastic push pin on each side attaches them to the center piece. It's about a 10 minute job to replace them both and about 30 bucks for the parts.

The front brake ducts are located in front of the air dam but the air dam does help with the air going into the ducts. The side air dam helps lower the aero drag by directing air to the outside of the car, around the front tires. Those wide tires really add to the car's drag and the air dam help to minimize the drag.
already have popped a screw and air diffuser is separating from body..is it ok to take it off? seems you'd pick up 2" of ground clearance.
I'd like to remind folks that you change the basic functional design pieces at your own risk. The air dam is put there for a significant reason. Removing it can cause a change in engine cooling and for what? As much as it costs to do any engine repair, why take the risk for such a cheap piece of plastic? Just fix it.
