Invo = good all around traction
NT05 = great dry traction but no traction in the wet or cold
The salesman at discount had the NT05's on his 3000gt and said when he was downtown one day he got caught in a sudden rain storm. He had to pull over to the side of the road to wait for it to stop because he said his car felt like it was on ice skates.
Well, the strange fact of the matter is that I have both the Nitto Invo and NT05 tires on my car.
I ordered a complete set of Invos, but the rear tire size was on National Backorder, so I mounted the NT05s on the rear, and the Invo's on the front.
The NT05s on the rear are slightly larger than the stock .. they come in the 335 / 30ZR-19" size instead of the standard 325. The NT05s remind me of Drag Radials, and they hook very very good.
Here you can see what the tread on the NT05s look like on the car:
I have been running Invo's on my 600 RWHP Z for two years. I love them. They stick very well, are quiet and still have plenty of tread left. I would get them again in a heartbeat.

The salesman needs new tires. I had NT05s on my C5 and they handled the rain (including Florida thundershowers) fine. Yeah, traction went down a little more than it did with the Khumos they replaced, but not enough to make me uncomfortable.
If your Vette is a DD I would get the Invo's. If your Vette is a weekend or trackday toy, and you actually use the cornering performance of the car, I would get the NT05's.

Maybe but the NT05's are even rated low for wet traction. As someone else pointed out, it really depends on your driving habits.

I have the 05's on the rear of mine. I bought them for the straight line traction, and of course, compared to the worn out GY's, it's a world of difference. Besides getting a lot better traction it also eliminated the wheel hop I got when shifting to 2nd. This doesn't happen to everyone, but I was pleasantly surprised.
I have not drove in the rain yet, but like some have said, just don't do anything stupid.
You never answered the question of why you're saying no NT05R.. did you have a bad experience with them or do you DD your car or something?
Apparently the NT05R may last a shorter time but they're sticker and will handle more power. The NT05 typically get responses from people saying they're better at cornering, but for the street I don't think you're going to be encountering the limitations of the tire.
