With the other white accents on the red interior I don't think you have to worry that the white dash gauge background will be too much. Personally, I'd go with a more subdued look but I think you're way past that point now. If you like the white on the instrument cluster go for it!

Maybe white guage faces instead of the panel overlay, with the red trim rings.

I have the stainless steel gage face plates against the OEM black background. What Im thinking about is going with the red rings and the stainless steel face plates agaiinst the black background. I think the white is too much contrast. Go with the red rings and think about the stainless steel face plates.

Red rings with the white overlay looks good to me. Goes perfect with the rest of your interior.

I think the focus should be on the guages, not on the backround. To be honest I would stay with the stock silver surrounds, as I think the red surrounds are distacting; but then again I'm an old fart that doesn't appreciate bling.
