With HOD you do not pay extra for the instructor, with Chin I believe it was an extra $75. Definitely well worth the money for the experience you get. David

This. Flat Out Motorsports is also a great group of people, and generally have smaller run groups...but cater to the more advanced driver, which is great if you really want to push the envelope and know how to do so.
Chin is definitely the biggest and has the most resources to help you learn. I have only done HOD once and was happy with how the event was run, but the track left much to be desired (PBIR).
You likely have various options for 'high performance' driving. Besides schools such as Bondurant, Spring Mountain, Skip Barber, etc. I suggest you look into either NASA (National Auto Sports Association) or SCCA (Sports Car Club of America). There are others but these are probably the big two, national, club racing organizations. You should start with both in-class and on-track instruction. Both NASA and SCCA run excellent programs. I highly recommend either one and yes, I'm a track junkie.
Last year I had registered to run the rolex 24 course at Daytona with the HOD group. Sadly, I couldn't make it because of surgery on my right shoulder. 2.5 miles driving on the high banked oval and ~1 mile on the infield twisties. BEZ06(forum member) has run that event and has a couple of really neat videos of him on the track in his Z06. I hope to make it to the HOD event at Daytona, Dec 8 weekend.
I have done HOD at Road America, It was arguably the best time I have ever had! Awesome track, awesome instructors. I would HIGHLY recommend it. You really don't understand the limits of your corvette (or any other car) until you do this. I was amazed at the potential of even my 06 z51
I have done the Florida and South East, variants, but well run organizations, I didn't see you location in your avator, Dave works primarly out of Roebling Road outside of Savannah GA and Henery works out of Homstead and Palm Beach International
