Good investment. If you can get codes that is a good guide. I had a GM truck that was not used for a while and 1 of my injectors clogged up on me and gave a PO code indicating a lean condition. The dealership wanted too money to replace one injector. I put all new aftermarket injectors on it over two years ago for less money than 1 injector the dealer tried to sell me and have not had a problem since. I also got a line from the dealer that aftermarket injectors would never let the vehicle run right. WRONG!
Depending on the injectors, they are partially right. Most injectors don't come with nearly enough data to properly characterize them. Sounds like they were close enough to work fine though, so that is good.
The log isn't for codes, the log is for data.. fuel trims, o2 sensor readings, MAP sensor, etc.
Try to make a log with short term and long term fuel trims, bank 1 and bank 2, o2 bank 1 sensor 1, bank 2 sensor 1 and whatever else looks good. See if you can post it here

So I noticed the MAF remained at 0.1 lb/min regardless of RPM, even if I revved it. I decided to let the car idle and unplug the MAF and nothing happened.
By the looks of those plugs it appears you are running a little rich. You should have a nice white color between the electrode and the tip. I'm also a little concerned about what looks like oil residue on the threads of the plug in that last picture. Unless your valve cover seal has leaked oil down in there. A leakdown test (preferrably) or a compression check may be needed to verify you don't have leaky valve guides or blowby. I hope not. You could verify proper spark by hooking the plug up to the plug wire and resting the electrode on the header or block then turn the car over for a visual test. Improper spray pattern from the injectors could mean you are not getting a proper burn inside the cylinders. There is a way to clean injectors manually with a 9 volt battery and some solvent.
In talking with him last night it's possible one of the injectors isn't clicking.. I have no idea how injectors usually fail, but if it is stuck closed that would leave unburned oxygen making it to o2 sensors, which would appear lean, fuel trims would go way positive and voila, crappy running for all
