I installed LG's and high flow cats , kept my O2 Sensors, front and rear ( just for the visual check ) and I love them
The power increase across the RPM range is great and the sound .... I have NPP's and when they are open it sounds great
No issues at all !

The only issue is the heat, iv had to replace my clutch cable and 02 censors due to the heat. Iv also heard they are hard on starters but I haven't had any starter issues .

Plenty of room between the headers and my starter and the wires were not even close....
I am confident that it was much hotter around the starter and wires in that area when my stock manifolds had the cats tucked up in that area right next to the starter ... now the cats are down in the tunnel
Not sure why your O2 sensors failed because of heat , were they not exposed to the same heat when they were in the stock manifolds ?

I did not wrap anything , nor did I feel the need to ...maybe if you are tracking the car but not a daily driver

After removing the stock manifolds and cats , I felt that there was way more room between the starter/solenoid and the headers than there was between the starter and the old manifolds and cats , that cat was right there next to the starter and its wires
I think if you are tracking the car and making serious power then you need to wrap but not for a daily driver with just bolt on ..

I have installed LG & ARH at my shop, Quality on both r great but ARH are & easier install.
I had to do some welding on LG xpipe to get a good seal on connections.
You will love the sound & performance !

ECS installed AR headers on my '05 bunch of years ago & the quality has been great. If they (ECS) are doing installs at Carlisle this year, I'd highly recommend them. Also consider a tune to get maximum benefit from the headers. As a precaution, I also installed flex heat shields on the spark plug boots.
