Burning Brakes
It catches oil that is suspended in the PCV gasses. Keeps it out of you intake manifold. Really good to have with direct injection engines as it causes a build up on the valves of those engines.
Supposedly catching that oil can make your engine more octain tolerant. I put one on my C6 just because. It's not a necessity on C6 Vettes. They aren't DI.

Crankcase gases are no longer ventilated into the atmosphere like the old days. They are now fed back into the intake.
The catch can separates the oil from the fumes and holds it in a can. You empty it when you do an oil change, or more often if you drive your car very hard.
My catch can is usually about 3/4's full when I do my 'regular' oil change.
May not be absolutely necessary for a daily driver Vette, but it seems pretty obvious that keeping oil out of you intake doesn't hurt anything and may actually be of some benefit.
Easy and inexpensive mod.

I know EE does sell the brackets as stand-alone pieces on their website, so you may be able to purchase a bracket and jerry-rig from there: The LS3 bracket + spacer also works on the LS7 should you chose to order a bracket from EE.
