If you can't find a date, you might get an idea by seeing how close your VINs last 5 digits are to the last one produced - 40559

Second to last 2007 built (40558 Indy Pace replica) was supposedly built on 6/21. So that should be last build date.
The final Bowling Green 2007 production stats were released on 6/29

If you're interested in your own car's build date, just go to your friendly local GM dealer's service department and ask them nicely to print out the build information from GMVIS. It's been debated here whether "build date" means the date the VIN was entered into pre-production at the factory, or the date it rolled off the line, or the date it left the lot at BG, but either way it's as close as you can get.
NCM build sheets don't have build dates past 2006.
I can tell you the last Indy 500 pace car edition was produced om June 21 and it VIN was 1G1YY36U775140558. They built 40,561, so end of June appears to be correct.

I ordered my '08 on 9-10-07 and the process went on hold a few days later, due to CRS paint being unavailable. It went back into production in late October, but I don't have that date. All the documents shows a build date of 10-30-2007. It also has a pre-delivery inspection with 0 miles at the dealer in Dearborn, MI the same day and a certificate of origin dated 10-30-07. On 11-1-07 it had a PDI related fluid add at 5 miles. It also had another "maintnenance" SIC on 11-3-07 still at 5 miles (a Saturday). I believe the dealer called me on either 11-5-07 or 11-6-07 to tell me the car had arrived and was ready to go. I took delivery 11-8-2007 and it had 9 miles on the odometer, when I drove off the lot, although the speedometer statement and the in-service date/miles for warranty shows 10 miles. Later warranty work shows warranty expiration related to the build date. I believe the car was used as a demo for a week before I arrived to pick it up, since I wasn't local to the dealer and wouldn't arrive the same day I got the belated call.
You can eliminate "build date" as pre-production. And IIRC when I did the factory tour, I asked about build date and the answer was, it was the day it passed final inspection and was moved to the lot. I assume cars that were pre-sold got priority to deliver to dealers.
