Lots of posts on this. Did you disconnect the battery? If so what was the date?
Batteries disconnected after mid November 2018 until sometime in April 2019 had this problem. Some of the clocks reappeared about mid April but not all. Some seem to think it has something to do with the refreshing of a GPS satellite software but nobody really knows. No known fix at this time.
There's a sticky thread in C6 Tech/Performance you'll want to follow. There was a Tech Bulletin issued in February, but it doesn't offer much. The truth is GM and DENSO fumbled the ball in 2011 when the Air Force announced changes to GPS broadcast message header formats. Think of this as a Y2K-like problem. The firmware in C6 and Cadillac head units was never updated to comply with the change. As a result, they can't properly decode those headers and extract the data needed to compute time correctly. GM is "working on a solution". If you believe that, I have a bridge I want to talk to you about.

Claim they'd done nothing, got in one day & it worked.
Whatever happened only GM knows, and they're not really talking.
Safe to say it's software related.
Give it some time, might just rectify itself as it did w/ others.

Mine came back on April 6 at 10:45 AM while driving. It had been off since I disconnected the battery for seat cover install in November 2018 .
Mine went out in December, after a battery change, and came back on the first week in April. No big deal to me because I'm going to replace the head unit soon anyway. Good luck with your clock, it may just pop back on one day!
My battery is aging a bit and I am set to replace it. Does anyone know if an ailing battery contributes to this issue??
A weak/dying battery doesn't 'contribute' to loss of clock last I read the technical details of this, it's software related, some kind of change w/ GPS et al.
If you've a weak battery replace it before you get stranded, hell w/ the clock.
Had exhaust work done on an '08 Z06 Jan '19, battery disconnected.
Clock's still there so this happens w/ some, but not all.
To complicate matters some who lost their clock reported at some point regaining it.
