3 hrs Wow! I have that into just getting hose fittings off The last clown that was in there must have used a box wrench to tighten the hoses and stripped them both. Tried everything to get them loose.
FYI if you use bolt cutters and cut pressure line at the rack you can slide the rack out the passenger side enough to get the job done and save the more expensive return line. Take off the Alt./power steering pump bracket and you can easily change the line. Cut hose at fitting and use a socket.
FYI in the process I had to cut the power steering pressure hose. The one from parts guys did not match my old one (2005) BUT the 2004 one is an exact match. You must remove the alt/power steering rack and feed the line in from the wheel well and attach to the power steering first. Then angle the rack down and attach the hose before you line up the holes for the bolts. Also easier to remove the small idler wheel for extra space.

The parts guy should have told you that the hose doesn't look like your old one because the 05-07 design hose has been discontinued and replaced with the 08+ style longer hose that runs along the rack and then up to the pump. Had too many leaks with the short early-C6 hose.
3 HOURS !!! Must have been super man! Suppose if you've done a number of them you could get it down to that, especially with two guys knowing exactly what they're doing. Not sure why you had to cut the PS hose unless it was just because you couldn't get it loose. Took the rack out on the driver side with dropping the engine cradle about 3/4 of an inch, saved both hoses. After looking at your OEM balancer bet you're glad you did it. Mine looked similar. These things have nearly a 100% failure rate. Smart to go with the ARP bolt too.
I know the GM ones are no good but will a dorman brand be ok? Also is alignment on the crank an issue?
If you mean rotational alignment? No it's not a issue. The ATI I put on mine had timing marks so just for OCD reasons I tried to line them up with TDC as best I could. But It didn't matter.
I have a 05 with 40,000 and after reading some of the post`s I looked and did see a little bit of wobble. I brought it to a shop that I can trust and after they checked it they found nothing abnormal and told me they have replaced them on other corvette`s and some still have this after replacement. Just sharing as I am not a mechanic.
My HB was replaced 4 years ago and there is absolutely no wobble with the new one after the install, i would question the competency of that mechanic
