Just replaced cashmere leather seat covers. What is the best product to prevent blue Jean color from staining the seats over time? Also, I don't what that super shinny look.

If you replaced with OEM leather it has a urethane coating on top of the leather, so leather conditioners basically don't soak into the leather. Just periodically use a gentle leather cleaner to remove the blue. Or you can use one of the combo cleaner/conditioner products if it makes you feel better.
I worked tier one OEM seating supply quality engineering/management for over 10 years so I am very familiar with seat material testing and qualification requirements.
I use their Pristine Clean it works great and has for many many years, on my leather and vinyl. Cleans great and smell like leather and not some perfumy stuff and put it on with your hands. The Rejuvenator is for great for real leather hides and not leatherette type finishes. Took me a long time to accept this advice!! I will say i still use a cleaner combo for the nice smell

Damp microfiber cloth. Easiest way to spot real leather vs almost all automotive "leather" is to put a couple drop of water on it. If it soaks in, real leather, if it sits on top plastic coated. Corvette seats are the plastic coated variety.
Leather conditioners won't hurt anything but the only place they will actually absorb into the leather is if the urethane coating has worn off or cracked. If you keep loose dirt and debris off the seats so they aren't "sanding" the leather when you are getting in/out and moving around on the seat while driving, the urethane coating tends to hold up well for many years.
I used a leather cleaner product to periodically clean blue jean transfer from my wife's tan Enclave seat bolster. Most of my leather interiors have been dark color so blue jean transfer doesn't show. I personally rarely use conditioner products on my seats or dash. I use a vacuum with crevice tool to remove loose dirt, then wipe seats and dash down with damp microfiber towels that have a little car wash detergent on them, followed by a dry towel to remove any moisture. If the seats start looking dry or the urethane cracked to expose the leather I like the creme type leather conditioners. Let the seat get hot in the sun, then rub it on by hand. A little goes a long way; I feel doing it directly with your hand makes it easy to make sure you get conditioner everywhere, and especially rubbed into those spots you feel need attention. Let it "soak" in for a couple of hours after application, then wipe everything down with a clean towel to remove any remaining conditioner. This is just my approach. I am certainly not claiming this to be the best or only way to do it; it is just what has worked well for me.
The wife's Charger is 10 years old now, has never needed any conditioner treatment, and the seats still look great. I owned a 2002 Avalanche for 14 years and only treated those seats a couple of times. They also still looked great; the GMT800 leather was bad about wearing, and especially for developing cracks/creases.

You can use a product like Gyeon LeatherShield to help prevent occurrences of blue jean transfer and other staining and make cleanup easier when the occasional mishap happens. It won't make the surface shiny or stiff and will retain the original look and feel of the surface.
