If you drive your car on week ends and always run e85. Is storing all week with e85 in the tank a concern? How long would you sit a car with e85 in the tank before it's a concern with corrosion and gunk?
Not that I would, but my friend leaves it in all winter lol. Haven't had a fuel related issue yet. His car is a Rx7 with metal tank also. I have yet to have a problem in the last 2 years, but I purge the system with pump gas over winter.

Im in south Florida so I drive year round. If I was storing it due to travel is fill it with pump but I drive it every week so not sure e85 is an issue for me?
Kind of a hijack....As I understand, it is possible to run both e85 and gas by switching tunes. However, how do you manage this with what is in the tank? Is it necessary to completely empty the tank of gas before adding e85 (and vice versa)?

Flex fuel, no tune switching. Car automatically adjust anywhere from pure gas to 100% ethanol. Just fill up and enjoy.

I've let mine sit for several months without any issue, but I'm also in a much drier climate than Florida (I'm in AZ).
High humidity states your shelf life for ethanol fuels are shorter as the fuel absorbs the moisture in the air. I'd feel comfortable letting my car sit for a few month in your state, but would consider filling the tank with standard pump fuel if it was to sit for 3 months or longer just to be safe.
Same, mine has sat for about a month before without any issues. I’d try to stick with stainless injectors if buying new (ie ID’s X line) but I’m running regular ol ID1000’s and they’ve been fine
