I have a problem with my car.....every so often (once or twice a year), my water temps and oil temps rise to astronomical levels. 250+!!!! It doesn't do this often and happens when I am in traffic. Once the car hits the open road, the temps come back to normal. What should I look at? Should I flush the coolant system? Do I need to add water to it? Thanks in advance
Start with the simple things....make sure the coolant system is full and if it is, replace the thermostat. It's not unknown for that to got bad intermittantly. If that doesn't work, head for the dealer & have any further work done under warranty.....
I'd check for proper airflow first...trash bags, etc sucked up against the condenser/radiator (check in-between as well) (poor design bra?) ...working cooling fans. Coolant/fluid levels. Tech. check it out.

With the mods listed under your signature I would be suspect of the fan not being correctly programmed when the tune was done.
There might be something blocking the incoming air when the fans are running. Also open the hood and check that both fans are working, by turning the A/C on.
The C6 water pump is not sufficient in hot stop & go traffic for a heavily modded engine. I have had the same problem, but will be installing a higher volume water pump.
