2.56 vs 2.73
If both cars are the same 08 verts (A6 trans, NPP, F55) and the only difference is the 2.56 in one and a 2.73 in the other can the difference be noticed and if so how?

I would say the difference would be ever so slightly noticable, maybe a tiny bit more 'tip in' throttle response with the 2.73s which will ultimately yield slightly quicker forward motion but I'm betting that the difference is close enough that the driver with the better reaction time will still win. Weather from one day to the next might even have a bigger impact on all out acceleration than the gearing change would.
