I have a '05,C6 coupe with the adjustable suspension option. I was only able to drive it a couple of weeks before putting it away for winter, but it didn't seem to make any difference which setting it was on. Is the difference that subtle or is there a problem with my cars set-up?

The difference is subtle, I have the same and can tell the difference in ride, but it is only moderate.
The difference between modes isn't a soft versus a firm ride per se...the sport mode actually 'tightens-up' handling or steering more than the firmness of the ride. In a safe place try driving at a fairly slow speed (25 -30 mph) and try turning the steering wheel rapidly from side to side...do this in both modes and you should notice the difference. Naturally, be careful not to have an accident doing this.
