not all thermo's are created equal. just because it looks the same don't mean it is. the 'stock' unit has a 'disc' on the end. without the proper depth and or 'disc design', issues will be experienced.
anything prior to late '04 (ls6) is not the proper design for the ls2/3/7
Just personal preference. You are preaching to the choir here. My GN's are on 160's my 95 Z28 had the 160 but when I purchased one of the first C5 Z06 back in 2000, I put a 160 t stat and tune. The damn thing never got warmed up until I was practically at work (15 miles later) me not the car...even though I have a garage for the cars. I didn't want to experience the same distaste I had for the 160 in an LSx motor. However, I recently took my C6 Z06 to the track and most of my operating temps were at 200 to 205. The Tstat should help and with a tune probably more. I guess I just want to experience it myself then go to the 160 if I really want to.

Are you in a hurry? The long range benefits far out weigh the extra time it takes to heat the motor.
I changed to a 180* thermostat and my cruising temp went from about 196* with the stock tstat to 192 with the 180 * stat.
I didn't want to go to a 160* so I installed a 170*. The cruising temp is about 187*. I used a Diablosport to adjust the fan.
It doesn't seem worth the effort to go to a 180*.
