do the engine covers keep heat in?
Since they are just plastic, not really sure if they would or not. Do you think its better to run with them off?

Theoretically, yes... They will prevent some air from rising up above the hot heads and headers and venting into the rest of the hood. Them being plastic is of no bearing here since most heat dissipation under the hood is due to air flow.
In practice with the hood closed there is so little airflow in that region so far up that you would never see any measurable difference anyways. I run with mine on because I like the way they look

One of the first things I did was to remove the covers and throw them in a box. I later sold them here on CF.

Yes, yank them. That was the first thing I noticed was how hot they stayed after driving around. Plus they look gay as hell. No offense.

I don't think they look that bad, but the heads/intake stay cooler I'll take them off.

Those fuel rail covers look cool as hell. I had a Camaro SS w/LSI and bought Corvette fuel rail covers for that because it looks so cool.

Its all what you like, I didnt mean any disrespect but to me the are as gay as a big wing on a Neon. Just for looks.
