Spinmonster's setup is probably about as wide as youcan go; 315s... I've heard that depending on the tire, your ride height, wheel offset, and alignment you can get a 325 to fit to.
The better question to ask is what tires you can get in those sizes... The selection is very limited unfortunately.
Lately I have been contemplating the Toyo 888Rs...
325/30R19s GY on CCW 19x11 worked on my C6. 295/35R19 BFG KDW2s now on R (275/35R18 F) a much better tire.
PowerLabs is right that alignment etc. can make a difference, add a litte camber it will tilt the tire in on the top.
I'm not as concerned about up front. When my front BFG's wear out I'll probably get some Kumho's. They may not match but thats price you pay for 600 RWHP.
I ran Michelin PS2 305/30-19 on the rear and 275/35-18 on the front using stock wheels. They fit well and are a giant step above the OEM Goodyears.
Michelin makes a 315/30-19, but only in the Pilot Sport Cup race tire.
Remember to maintain close to the stock stagger or your active handling will interfere.

True, unless you change the tire heights in the tune, anything will then run with active handling fuctioning fine.
I think the stock tires at 26.9" tall barely fill the wheel well so I cant see running anything shorter like a 305/30 at 26.2" new or a r-compound (less tread height) 315/30 at 26.1" new.
