Is there any particular reason why the price for a Vette is almost $200 more than an f body? Doesn't make much sense to me considering I've done them on both cars and the Vette is MUCH easier to work on I think.

With the Y-body platform, the steering rack in front of the pulley. This usually requires the removal of the front wheels, unbolting of calibers, and sliding the steer rack out of the way. Combined this takes about 45min to an hour on tear down and assembly which is why you see that added cost over the F-body, which does not require these steps.
