You will get responses on both sides of this question (like everything else in life) but you asked so ....... I wouldn't put non-coated headers on my car. I have never heard a solid reason NOT TO but many reasons to. If you can't afford to coat your headers and really want headers, than I would say get them and you'll probably be just fine like the many many people who go with un-coated headers. It probably shouldn't be a deal breaker but if it's not about the money, I would strongly recommend them.
Just my 0.02
Here's a few pictures of my LG Pro Longtubes with Jethot Sterling coating. Oh, how they look has little to do with my reasons for having them but they are pretty

I had a set of headers that were coated by JetHot. Within 20 months, the coating was flaking off and rusting. I sent them back to have them recoated and sold the headers. Ended up going with non coated stainless steel and works just fine.

Wow, bummer. I would say the exception not the rule. I'd be a bit pissed off myself though. Ive run coated headers for years on many cars and have yet to see that myself but anything is possible. Kinda like the vararam owner who sucks water and now thinks vararams will suck for everyone. I'm not implying you're on a mission against coated headers, everyone's experiences are what the OP is looking for. But I still think your experience is rare and probably has a side story somewhere.

Same here, I've run coated headers on my 75 Chevy truck, 91 Camaro, and several engine high-performance rebuilds for friends....never had any flaking, discoloration, or otherwise. I suspect something else was going on. And, when I get the LG Pros for my Vette, they will also be coated; I don't care if they are stainless steel or not......I already know it's worth it to have them coated. Period.
We install a lot headers. Most of the header are Stainless steel so the customers usually don't have them coated. They sure are pretty when they are coated though.
