wheels and tires Need Help

wheels and tires Need Help
I have a C6 with stock wheels and tires and have went through the forum but get confusing information. The car hasn't been lowered or modified. I do track the car and next HPDE Event will be Aug 22-23.
I have gotten my new wheels and wanting to buy tires for them. They are 2008 Z06 style for the C6
Front Wheels are 18x9.5 +57 offset wanting to put 275/35/18 on them.
Rear Wheels are 19x11 +79 offset wanting to put 325/30/19 on them.
Does anyone have that size on theirs? do they rub or stick out? Will I also need to upgrade to the Z51 or Z06 Sway Bars.
These are ZO6 tire sizes that I am looking at and wanted others information before purchasing

Still after reading other post I am still second guessing this. Wanting to purchase this Tuesday and was hoping to have some advice.
