How much can the Stock 05 diff take? If I'm on tires that are a little more sticky than stock with my car being completely stock how much do I have to worry about it breaking while launching it, say from like 2k or a little more?
I would think the greatest danger would be from wheelhop, which can definately happen. Maybe try to abort launches that hop... Though at the strip you only get so many runs and throwing one out can be hard...
Since it's a 2005 wont i need to change the adapter plate on the back of the transmission also?
C6 Z06, not a C5. You will have to change the trans output shaft though. You can go with the updated C6 diff for cheaper if you plan on keeping the hp down.

be enough to be able to not have to worry about breakage in a stock application? And if I were to buy this how much more could it take than stock, if any?
I have an 06, stick car, and i am worried about breaking mine. been a ***** at the track so fare, nothing over 2000-2500 launching on some sticky drag radials.
If you're afraid of breaking it and don't have the money for a replacement diff just drive it easy and stay off the track. I broke the output shaft off of my 07 MN6 and almost trashed the diff from all of the pieces of the output shaft swirling around in the diff. It cost me almost $4000 to get back on the road with an RPM Stage 5 trans and hardened axles in the diff while everything was apart. You gotta pay to play... A&A blown 07 coupe 570RWHP
Not to seem cheap but I did pay and I'm sure you see my annoyance with trying to play with a stock car that can't hold up to its stock horse power and torque.. this is just venting though, thanks guys for all the answers.. This forum is great.
Part of the fun of owning your own car is being able to conduct your own empirical tests to figure out exactly what the answer you're looking for is. The cool part is that no matter how many of us give you whatever guesses, lies or circumstantial evidence we feel like, not one of us could possibly predict how much abuse YOUR diff'll take. You only get a few lousy years on this planet, most of which will probably go by without a 'Vette in your garage. Go on and blow the damn thing up, as long as you have fun trying and don't blow it up in my driveway. What's the worst that could happen?

I've been told the strut won't prevent your dif from cracking but it may help prevent further consequential damage.

I think under 'normal' use has some bearing on your complaint. Virtually any product can be abused...pushed beyond its design specs. These cars aren't necessarily designed to withstand high RPM drops off the line with sticky tires. If you want the car to do more than it was engineered and built for you have to be willing to bear the consequences (or make modifications which may help prevent failures for how you're using the car).
