when at the autox track, mine is running at 220 after the first run, then it sticks around there for the other runs, but goes down to like 205 to 210 after a couple minutes on the way home. When I turn the car back on inbetween runs the temp is 235 for about 30 sec to 1 minute, after the water circulates it is back to 220.
Does this sound about right?
Is there a way to have a manual fan switch so the fans will stay on inbetween runs even with the car off?
and have to cool it between runs, and have a Casper switch.. works like a charm.... also if you want to spend a few (more) $ get an electric (Miziair) water pump.. then you can shut the car off, & run the water pump & fan with the engine OFF...
However I suggest an Optima Yellow Top Battery.... I've never had any problims & mine works like a charm..
Two things. first off I should have also stated that under normal driving in town i go from 196 to 203, and freeway about 192 to 195.....
Where do I get this Casper switch?

Both your street and track temps are normal. Your track temps aren't really getting high enough to worry about IMHO but there are things you can do to keep it cooler. You can have a tuner reprogram the fans to come on at lower engine temps and swap in a 160 degree t-stat.
You can also get a manual fan controller as suggested. I think jegs and similar shops have the casper fan controllers. Just google it... you'll find one.
