Maximum Speed 0-??
OK I'm a new Vette owner and have a 08 with z51 and it's a manual. My questions is if i want to come close to the posted 0-60 numbers (4.3sec) what gear shift do I need and what RPM should I shift at?

Nope, afraid not. Maximum speed in 1st gear with gear ratios that a Z51-equipped C6 has is 50 MPH.
Even a non-Z51 will only do 55 in 1st gear.
