I couldnt find a direct comparison thread. Is there a significant handling difference from the z51 to z06 shocks? Any info would be great.

Sure there's a difference. The Z51 shocks are for a base cars sway bars, weight and F to R balance and the Z06 shocks are for the Z06 sway bars, weight and F to R balance.

Mix them up and you have a mixed up suspension.

As we all know ; the factory set ups are a compromise. Trying other componets may suit your needs for your driving style.
I'm guessing the z51 shocks are close to or the same as the Grand Sports.
I put Z06 shocks on the rear only, of my GS . These worked better for me than the GS valving. They cut down the amount of oscillations over bumps.

My experience was different, I found the Z51 shocks on our factory Z51 to be too harsh for normal driving on the bombed-out roads of Illinois. I actually replaced them with base model shocks and felt that real-world cornering suffered only a little, but the ride got much better. Other folks have been happy with Koni FSD's or or Bilstein HD's.

I would consider Z06 shocks only if I lived where the roads were smooth, and was doing track weekends with the car.
But, YMMV.

Default Sway bars

What are your thoughts on running the Z51 sways, with Z06 leaf springs?

Sways and springs are designed to work together as a package, so I'm not sure how that combo would work on a base car.

The Z06 has wider rear tires, so the Z06 pckage is designed to work with them. Putting a full Z06 suspension on a base car is reported to produce oversteer.
