I have a manual switch to keep my dual mode exhaust open or just allowing it to open above 3200 rpm at full throttle.
The question: is there a simple way to keep the straight pipes from opening any time, I would like to install an in town switch for a quite mode even under full acceleration at high rpm.
I have headers and a cam and would like to be a bit more stealthy above the NPP threshold.

Might want to ask your tuner if keeping the NPP's closed under load will adversely affect your tune.
My tuner had it on his Z06 (always open or closed NPP mod), but he did say it will cause too much back pressure, so it has to be accounted for in a tune.

Buy a Dashlogic module. It gives you the option of using your mirror switch to switch the NPP from normal mode (I.e. Stock - open @ ~3500rpm) to fully open or fully closed modes. In the fully closed mode, it will stay closed no matter what the TPS or RPM is at. I also have the M2W switch, which can only switch between open and stock. This switch has now become redundant, although it still works even with the Dashlogic controller plugged in.
The good thing is that the Dashlogic can do so much more than control the NPP exhaust.
Sunset Orange Creations has a new controller that has open, shut, or user rpm input. I have one and it works great. I have mine set to 4500 rpm to open, or closed most of the time because the kooks headers makes the NPP too loud in town when it opens.
