Everyone now and then when I hit the start button it just cranks (no codes, no dimming lights). I hit stop, hit the button again and it starts. Every time this has happened, it only takes one stop then always starts on second push.
I had a truck with a similar issue, and it was the check valve in the fuel pump. It would let all the gas bleed out of the lines, so if it sat for a bit, the line would empty and then it would take several seconds of cranking to get it started. It would usually go thru the first crank cycle of a few seconds, and then immediately start up second time I tried to start it.
If I turned the key to run and waited 3-4 seconds, then tried starting, it would start right away everytime as the lines had enough time to pressurize.
This makes sense, so to test it, just hook up a fuel pressure gauge to the fitting at the engine and then let it sit overnight and see if it keeps some fuel pressure or if it all bleeds off.
You can leave the gauge connected and keep an eye on it.

Yep, my 03 has done this for 40,000 miles.
Simple trick, cycle ignition 3 times letting it sit in the on position for 5-10 seconds. This builds fuel pressure so it fires right up without putting any undue wear on the starter.
OP check fuel rail line pressure and see if it bleeds of to zero rapidly.

You said "everyone now and then" a bad fuel pump check valve will delay start every time, unless you prime the pump first. Priming the pump you just press start without engaging clutch for a few seconds for the fuel to build up in the fuel rail. Then start up normally and your good to go.
With headers, I suspect a bad starter or solenoid.
I had an intermit starting problem on another car and could not replicate it at the dealer. Finally, after it failed in my garage I had it towed and they replaced the starter/solenoid.

But the OP said that the car always turns over, it just doesn't catch and start. The starter and solenoid are working right. Their job is to turn the engine over, responsibility for actually starting lies elsewhere.
