If your coolant temps are already a concern based on your use of the vehicle, adding one certainly wont help in that category. Hard to say if you'd see a measurable difference though without knowing more.
Does adding a z06 oil cooler restrict airflow to the radiator?
Yes, of course it does. But that said, it's very unrestrictive compared to aftermarket coolers. It's very thin and the rows aren't very densely spaced.
Yes. Get a Ron Davis Z06 radiator and a 2005 Z51 oil cooler pipe assembly.
How would that work? The 2005/06/07 Z51 has the transmission (manual and auto) and engine oil cooler in the water radiator and the Z06 only has the trans/diff cooler in the water radiator, so you would be short a connection.
I went the other way and got a Z06 (2007) oil cooler and a Z07 (2011) all aluminum radiator that accepts the trans/diff cooler lines.

I believe he's recommending a Ron Davis with a TOC and an EOC, and the Z51 lines are shorter than the OE C6Z lines to the air-cooled oil cooler...just to make for a cleaner install.
I went the OE ZR1 radiator w/ Zr1 oil cooler route myself.

The ZR1 and Z07 radiators are same except for the way the hoses connect. They are the only all aluminum factory radiators. The base and Z06 radiators with those plastic tanks, tend to crack.
2005 Z51 was the only year with a eoc built into the radiator. Starting in 2006, a shorter version of the Z06 external cooler was used. Adding another cooler in front of the air conditioning condenser just impedes airflow to the radiator that much more.

Nope my 2006 Z51 had it in the water Radiator, they changed in 2008.

Correct...so I had to source a ZR1 upper rad hose when I converted mine. Little known fact is that the OE ZR1 & Z07 actually utilize a Griffin core.
It was a win-win for me that I not only cured the low oil temp issues on the street, I also got a much, much better radiator over my OE unit.
