Steady 70 mph cruise and my coolant temp oscillating between 180* and 225*. I suspect I have a failing t’stat.

Could be a bad t'stat or a bad sensor. If temp goes up to 225 first & then down to 180, I would suspect the sensor since at 225 the stat would be opened fully & if it closes, temp would go higher.

Have you checked your coolant reservoir for the proper level? Something very simply to overlook since you didn't mention this.

I’m running a 6.8 liter, D1 with all the goodies. 823 hp. Biggest DeWitts with their 17” brushless fan and dedicated fan sensor. Also a 112 sq inch separate EOC. I’ve been using Evian coolant with a 160* t’stat. I’ve spoken with Evans and they suggested removing the t’stat completely. I spent this morning doing exactly that. Test ran the car this afternoon and the roller coaster coolant temps are gone. The car ran right at 185* at a steady cruise of 75 mph. The OAT was 72 during my cruise. I have had people tell me that Evans isn’t the greatest for heat transfer and when the hot summer OAT arrive and the Evans isn’t doing the job, I will probably go to distilled water and a 30% antifreeze combo.
Prob not tuning related (did you get a tune), but sometimes can be incorrect fan settings, as well..
At 70 mph the fan is off. Idle and below 40 mph, fan duty cycle plays and important role in the cooling process.
Removing the T-stat completely could also give you heating problems because the coolant is flowing to quickly, not giving a chance to absorb the heat.
I would replace the T-stat, 70% distilled water with 30% coolant and Red LIne water wetter should all help. Distilled water only in that Dewitts aluminum radiator.
If the temperature jumps up and down quickly, I would suspect a bad temp sensor or bad wire.
