How does the manual convertible top seal on the deck lid.

On? No.
There is a weatherstrip on the car body (top compartment) that the tonnuo panel (sp) seals to.
An online part seller part diagram search may add clarity.

So there is nothing to clamp on? It just seals on that black strip that the power top seals to? What holds it down to seal? With the power top I just assumed the hydraulics kept pressure on it to seal. But Manual tops don't have a hydraulic system that I know of.

It cantilivers down from the frame of the top. No bolts, clamps, etc., just forced down by the framework.

I did not fully misunderstood the OP's question.
First, no, it does not sit or seal on the decklid.

However, it does latch (open & close) on the waterfall (painted panel between the seats).
The latch/ lock mechanism has a cable to release/ secure the tonnuo (sp).
Maybe this is the answer, the latch, the OP seeks?
Maybe not?
PS I'd still recommend looking at a parts diagram

Simply tension from the top bows. There are no clips or clamps at the rear of the top. The only clamp is the single clamp at the center of the windshield frame.

Can a power top be used as or converted to a manual top without changing the top bows or fabric?

As an owner of a 2009 Vert with a power top I've thought about this myself. Yea I've had to replace the motor that holds down and secures the rear bow of my power convertible top so I know the issue first hand. So I think the answer is NO. The way the manual top works is there is no mechanism to hold down the rear bow. Rather, the manual convertible top is constructed in such a way as to put downward pressure on the rear bow when the manual top is secured by the front windshield latch. If the power top bow was the same as the manual top bow, then there would be no need for the hold down motor/mechanism. That's my opinion but I'm not an expert here and I would love to have a manual top instead of my power which is prone to break just when you need to raise the top as it begins to RAIN. One of the many ways the C6 can leave you stranded.
