I'm not sure what you mean "if it was a delete option and you could save $500 since the plant would not install the hardware" statement. In this link https://www.onstar.com/web/portal/planspricing?g=1 the tab on the right seems to 'give' you the mirror with the hardware in it if you subscribe to the plan on a car the didn't have OnStar.
I'm going to use the full part for the provided time and then switch to the 4 year or 48 month plan. Since the car will have the factory NAV built in I'll just get the 'Safe & Sound' plan which is $499 for 4 years or the equivalent of $15.20 a month after the free period. I imagine most of that is a credit from the insurance company anyway for the tracking feature.

The first year we owned our Bonneville GXP we were on a dark lonely road and came across a motorcyclist who had hit a deer... I had no idea where we were as far as landmarks or cross roads. I hit the OnStar button, they knew exactly where we were and within five minutes A State Trooper came from one direction and a Sheriff's Deputy came from the other.
I had planned on letting it lapse... but we still have it.
Come to think of it, my '05 C6 does not have it. I am one of those clever guys who let the car lock my jacket, with keys, in the trunk. I can't start to tell you how much I would have liked to have had OnStar that night.
