I kinda hate the shark the gray due to the brown look it has in some pictures. Since they discontinued Cyber Gray, will they be bringing another gray in anytime soon?

Doubt it.
I think with the two new colors in 15, we prob won't see any color changes for a few more year.
To come out with a new color is a 2 year process so they wouldn't keep a color for one year unless it was a planned special edition (Carbon Flash, Carlisle Blue) or a big-time lack of demand (Lime Rock Green). The time and expense of changing out a color does not make it worth keeping a color for one year unless it's for one of the two above reasons.
I think a large number of Z06 orders will be in yellow so that color may stick around for a few years.
I said the same thing 2 months ago but, at least here, we are not seeing it to this point. However, I don't think GM will remove yellow even if it does come up last place.

I have a feeling I know which color will come up last, and I ordered it!

I have heard that one other time.
After owning a SG for 6 weeks now, and seeing a few at the factory... my eyes are not detecting this "brown". Of course, everyones eyes are unique at detecting various tones & hues; but have never heard anyone mention this brownish "under color"... at least when seeing a SG C7 in person.
Just yesterday I visited an autocross (spectated only) and my 2015 grew a crowd. One guy said he generally doesn' t like silver/gray colors on cars... but really like mine. He wanted to know if I had the car painted a custom color on my own; and was surprised to find it is a factory color.
THANK GOODNESS we have quite a choice of colors; so one can get something their own eyes find pleasing.

It's funny that you say that. Most of us here see that brown tint (almost a patina) but 2 guys don't see it and thinks we're all nuts! We've also had a few customers who didn't see it but most do. It's funny how colors work like that.
I believe that I have seen lists where customers have voted on the colors and blade silver is last. but it has been around for awhile. I almost was ready to get the Shark gray for my Z06, as I had a 2014 Cyber gray and really loved that color. However, I am currently driving a 2015 Arctic white and although it is a pretty simple, plain color, it really pops with the red interior and the black vents. It draws a crowd every where I go. I have not seen the Shark gray in person yet.
I believe that colors like silver, red, black, yellow will not be changed because they are pretty base colors for a corvette. But the others all have metallic flake in them and can definitely vary a lot in different amounts of light (NRB, Shark Gray, Crystal Red, etc)

Silver is my favorite color, especially with a red interior. It's also one of the basics that has been around in one form or another since 1996. Before that it was called "No Sale Silver" for a reason!
However, I could see silver be replaced if they brought back a pewter color but I think the shark gray is supposed to be a gray/pewter mix.
