How easy will it be to replace the stock radio?
No matter how good the stock radio is, I know I will want to replace it. How difficult does it look to swap out the head unit?
My BMW makes it almost impossible to swap the unit. I hope it is not going to be a custom job.

Unless I'm mistaken, it would take some extensive modifications to replace the head unit. I do recall reading threads about swapping speakers and adding amps. Search and you should find them.

This is what I had in my C6. And yes, the touch screen flipped down out of the way of the air vents, and yes, the top still fit in the back on the factory mounts.

All that looks cool and would be cool at a car show but in general I'm just annoyed by people who share their bass intentionally on the road. I even turn down the stock system even with my windows up if I'm at a stoplight cause I'm pretty sure it's loud enough to be annoying.

I would presume that you do not have the NPP exhaust option......

So again, what about the stock HU prompted you to want to change it out?

Or the ability to hear it if you do
There are ways to add the amps and sound enclosures to your C7s existing radio. Do a search on radio upgrades. One member did a great swap using Focal speakers, high-end amps, and an audison bit one processor.

At this point, it looks like that will have to be. When doing a stereo upgrade in my previous cars, I have always taken the entire stock system out, and started from scratch. As a teenager, I installed speakers, amps, all sorts of stuff. It is fun for me to dig in there and see a big empty hole, then figure out what goodies to make it go boom.

So how do I upgrade head unit to play my 8-Tracks & Cassette tapes?

There is no head unit on the market that would be improving on the C7's stock unit. You definitely can improve upon the speakers but the stock radio is so integrated that you'd definitely be degrading the experience instead of improving it. This is nothing like the radio in the C6.
