I have a C7 7speed and have recorded 25 and 50 mile averages in the 40's This was recorded in southern Illinois on I-55 between St. Louis and Springfield, IL which is fairly level. I was in Eco mode with cruise set at 65 mph. I very seldom use Eco mode when I am driving locally. Usually in Sport mode. I now have 27,500 miles on the C7 and my average mileage for the life of the car is 25.7 mpg. Other than a couple of long vacation trips last year, most of the driving has been local.

When I drove my car back from the Dealer in Ohio in January it was a 400 mile trip I had the car forced into 8cly mode and I still had 1/4 of a tank of fuel left when I got home
This car is amazing on gas.

Those are some impressive mileage numbers!
For some reason whenever I am near a Prius my mileage drops significantly - usually as I floor it and go around them while they drive 63 in the fast lane...

It takes X amount of energy to move X amount of weight. Eco mode doesn't by itself improve mileage, (reason some cars only get 17 mpg). Number of factors come into play; weather conditions, terrain, acceleration/deceleration, fuel octane, to name a few. Shutting down cylinders mutes throttle response enabling a more steady power flow. If you operate your car on eight cylinders, touring mode and throttle the engine like there is an egg under the gas petal, fuel mileage will virtually be identical. I have not used Eco mode either - I have the standard exhaust system and need all eight cylinders to make noise.

The indicated MPG from the dash generally reads higher, generally about 5% more than the true MPG, so if the readings are not a calculation based on gas filled, that should be taken into account.
I tried to see how much MPG I could get on a tankful, but don't have the discipline to not romp on it for that long a period, so I haven't been able to make it beyond the 20's.
If going strictly by the instantaneous numbers displayed, it looks impressive though.

I have Sport selected for the NPP Mode, Sport for Cluster Display, and Track for steering in Settings, so the only remaining features controlled by Driving Mode selection are AFM, throttle progression, and tranny shift. I have been keeping it in Eco mode and move to Sport mode when I want to goose it, mostly for the more-positive shifting--but I'm going to try using Sport mode for a while to see if mileage is impacted. If not, I'll leave it there, as good mileage is important to me.

I've run my A8 in all modes and don't notice much difference between them, including mileage. I'm told AFM holds V4 mode longer I can't really say that I've noticed it, although the tranny does shift quicker at WOT in Sport compared to Eco mode.
I have Sport selected for the NPP Mode, Sport for Cluster Display, and Track for steering in Settings, so the only remaining features controlled by Driving Mode selection are AFM, throttle progression, and tranny shift. I have been keeping it in Eco mode and move to Sport mode when I want to goose it, mostly for the more-positive shifting--but I'm going to try using Sport mode for a while to see if mileage is impacted. If not, I'll leave it there, as good mileage is important to me.

From Barstow to Las Vegas; cruise set at 85 the back loaded with luggage for two weeks and my wife beside me. Got 36.5 in the tour mode.
