Any updates on this? I had the exact same issue and result as the op a few days back. It's the 3rd time my car has overheated. The first 2 times I took it to the dealer and they looked at me like I was nuts. Did grab a pic of the temp gauge though for reference.

Your picture shows the phone connection. Does that ever go away? The reason I ask is I've had that situation and it was resolved by disconnecting the battery to "erase" the stuck boot up of the ECM. Is that a possibility or does the message go away?
1. Is there water/anti-freeze in the system? If not top it off when cool, maybe leave the cap loose to let bubbles get out
2. Does the fan turn on? It should automatically come on when hot
3. Does the thermostat get stuck closed? Hard to check, but a cheap fix, replace with a fail open thermostat
4. Does the water pump work? If the water doesnt flow it wont cool (last thing I'd replace)
If your car ever get noticeably hotter than 195F, turn it off. (I've heard of people continuing to drive the car like this at 260F and up)
If your car is overheating, let it cool before doing anything. (opening the radiator cap at 260F+ will burn you worse than you can imagine)
The theromostat for those curious, is a valve that opens when it gets hot, they are set to keep the engine at 195F for cleaner combustion, replacing with a cooler thermostat is generally not a good idea

1. I am not sure. I'll try that sometime.
2. It did not come on while idling. I have to turn the car off then back on to get the fan on.

I have noticed the car will only overheat after driving for more than 30-45min (hwy speeds) then being in stop and go traffic. It's almost impossible to reproduce this for a mechanic but it doesn't mean it doesn't happen.
Sounds like the fan is not coming on. When I drive at highways speed for that amount of time, my fan is roaring if I get off the interstate and stop at a light.

Huh? It's pretty well documented here that 210-220 is normal for the C7 coolant temp. That's where mine has run for two years. Above 195 is not overheating; not even close.
You may ask them to do a cooling system pressure check. I am wondering if a small amount of air is getting in and eventually gets enough in the system to cause an air lock.

On a side note, your oil pressure seems very low in that pic. I have never seen mine that low under any circumstances.

There is an Infotainment software update that supposedly fixes this. My 2015 (built 12/18/14) had the phone notification stick once and since doing the PI1375B update in May it has not recurred. There is now a PI1375C update that I won't do unless I incur another problem.

I've never seen my coolant temp exceed 200°, and that only once, as it has peaked at 196° since new, even during hot spells in traffic this past summer. Other threads suggest there may have been a change in 2015, as 2014 owners generally reported higher temps routinely in the 220° range.
I took my 14 C7 to our local dealership yesterday to get this taken a look at. Now I got a call back stating the mechanic and manager can't reproduce the overheating and basically said they don't know what the problem is... This is the third time I have had the car in for this and I keep getting the same answers! GM has got to have a fix for this, this is ridiculous.
IMO, your dealer doesn't sound very cooperative and you need to go to a different Dealer to start with.
Brand new Thermostats have been know to fail.
Just a suggestion, but if your fans are not running when they should, and the Dealer will not do anything, disconnect your battery for 5 minutes and hook it back up.
Then keep an eye on how the fans run taking note if they run differently or not.

If the dealer does not solve your problem this time I would go to another dealer. They make good money on warranty work probably not as much as non-warranty work. I would talk to the Corvette Tech about my problem and if they did not have a Corvette Tech I would go to a dealer with a Corvette Tech. Good Luck
